Strawberry Basil Shrub
Ingredients
2 Cups Good Quality Champagne Vinegar (the one I used was infused with raspberries)
2 Cups Simple Syrup (use a 1:1 ratio)
1 Cup Strawberries (fresh or frozen)
A Few Sprigs of Basil
Method
Combine all the ingredients into a large airtight container, I used a clean glass tomato sauce jar, once the container is sealed shake it to combine all the ingredients. Place the shrub in the refrigerator for 1-2 days, after this I removed the basil so it would not affect the colour of the shrub then I put it back in the fridge for another 2 days. Once everything has been steeping for a few days strain the strawberry chunks out of the mixture, if you want a clear mixture to pour it through a coffee filter after the initial strain. Keep this mixture refrigerated until needed.
