Tonka Bean Syrup

Tonka beans are small pods that are native to Central America and have been used around the world in cooking. Tonka beans have a very unusual flavour, they taste like a combination of cloves, cinnamon, happiness, vanilla, almond, abrosia, and cream. These little beans have become one of my favorite flavours to use in all sorts of dishes. I grate them on cakes and cocktails, I use this syrup to sweeten coffee and espresso or to drizzle on cakes to make them moist and decadent. I think the Gods accept these little beans as ambrosia.

Ingredients

1 cup White Sugar

1 cup Water

2-3 Tonka Beans Finely Grated, Sourced from The Silk Road Spice Merchant Based in Calgary

Method

Bring water, sugar, and tonka beans to a simmer, stirring constantly until all the sugar is dissolved and the mixture is a dark rich brown. Let cool and steep for at least 1 hour and then strain through a coffee filter into a clean glass jar. The simple syrup can be stored in the fridge for up to one month.
