I Like Pina Coladas

(Makes 3 Generous Cocktails)

Ingredients

9 oz Pineapple Coconut Juice

5oz Coconut Oil Washed Honeyshine Amber

1 1/2oz Black Bear Spiced Rum

1/2oz Clove and Star Anise Vodka (1 cup vodka, 3 cloves, 3 star anise, let infuse for 1-2days)

1 1/2cup Chopped Frozen Pineapple

12 Drops Pineapple Star Anise Bitters from Ms.Better’s Bitters

4oz Coconut Cream

2oz Fresh Lime Juice

A Handful of Ice Cubes

Method

There are two ways of making this cocktail, the super-easy way is to throw everything into a blender and let her rip. This way is equally as delicious as the second way the only difference is in texture. The second way is to keep the coconut cream sperate and place it in a stand mixer along with a tablespoon of icing sugar and 6 of the drops of bitters. Once everything is in the mixer mix on high until a coconut whip cream forms. While your cream is whipping blend everything else until smooth and divide into glasses, once the cream is whipped and is holding soft peaks spoon on top of your cocktail.

Garnish with a few pineapple leaves and dehydrated pineapple, enjoy on your driveway with a few appropriately distanced friends.
