Cucumber Collins

Ingredients

2oz Hendrick’s Gin

1oz Cucumber Juice

1/4oz Lemon Juice

1/2oz Kalamasi Lime Cordial from Frostbite

4 Drops Tomato Vine Bitters from Mad Lab

Soda Water

Method

To make cucumber juice I grated half a long english cucumber and then squeezed the cucumber through a cheese cloth and reserved the liquid. Save the cucumber as it can be used in homemade riata or tzatziki. Add everything into a tall collins glass over ice and stir until well chilled, top with soda water. Garnish with a sprig of mint or a slice of cucumber.
